Medium-long maceration in contact with the grape skins, alcoholic and malolactic fermentation in steel tanks, aged in French oak barrels for at least 18 months

Pair with Beef Short Ribs, Lamb Rack, aged cheeses (gouda, comté, cheddar) and blue cheeses: gorgonzola
