It melts well and is often used in cheese fondue. Unlike other hard cheeses, it does not break down in sauces when cooked. Its stringy texture makes it perfect for grating, grilling – especially in a Croque Monsieur. Best served with big red or white wines or even a crisp, fruity white Swiss wine.
