Use in various French dishes from soups, quiches, gratins, and tarts to fondue, salads, and sauces. Its fruity tang and creamy texture go well with white meat and wines, like Chardonnay, Chenin Blanc, or Viognier.
Cow's milk
Cow's milk. Hard.
Comté is recognized by its thin, beige rind. This traditionally made cheese has a firm, dry, slightly grainy, and more dense interior than Cheddar. Its nutty, fruity and medium-bodied taste profile is reminiscent of the soil, climate, and flora where the cows graze. It melts well and has a fruity tang that blends well with different dishes.
Keep chilled.

About Vagne Fromageries
Constant Vagne and his wife created Fromageries Vagne in 1926. The company remained a family business until the UCAFT (United Traditional Agricultural Dairy Cooperatives) took over management in 1991.
This success story is exemplary on more than one count.
The cooperative collecting milk at 11 local fruitières in the Doubs and the Jura departments, and handling the cheese ripening afterwards, is a one-of-a-kind operation across the Jura Massif.
The farmer, the cheese maker, the affineur (maturer), and the cellar master are involved in all decisions. And cheese has never had more engaged advocates than these men who share their pride in producing and developing each and every piece.
