This cut thrives on high-heat methods that quickly sear the exterior, trapping juicy tenderness inside. Here are two options for achieving a delicious result:

Pan-Searing and Oven Finish:
1. Preheat: Crank your oven to 220°C (425°F). Pat the striploin dry with paper towels and season generously with salt and pepper (or your preferred steak seasoning).
2. Sear: Heat a heavy-bottomed pan (ideally cast iron) over high heat until very hot. Add a high smoke point oil (avocado or grapeseed) and let it shimmer. Carefully place the striploin in the pan and sear undisturbed for 2-3 minutes per side, creating a beautiful browned crust.
3. Oven Finish: Transfer the pan with the striploin directly to the preheated oven. Cook for additional minutes based on desired doneness (use a meat thermometer for accuracy):
- Medium-Rare (recommended for optimal tenderness): 5-7 minutes (internal temperature of 52-54°C)
- Medium: 8-10 minutes (internal temperature of 57-60°C)

Broiling:
1. Preheat: Set your broiler to high. Pat the striploin dry and season generously with salt and pepper.
2. Broil: Place the striploin on a broiler pan (fat cap up, if present) and broil for 3-4 minutes per side, or until nicely browned. Keep an eye on it and adjust the distance from the heat source to avoid burning.
3. Optional Oven Finish: After broiling, transfer the striploin to a baking sheet and finish in the preheated oven (220°C/425°F) for a few minutes to achieve desired doneness (refer to temperature guide above).

Resting and Serving:
Once the desired internal temperature is reached, remove the striploin from the heat source and tent it loosely with foil. Let it rest for 10-15 minutes. Rare (48-52°C): This is for steak lovers who enjoy their meat incredibly juicy and tender. The center will be a cool red with a very slight sear on the outside.

Medium-Rare (54-57°C - Recommended): This is the most popular option for grass-fed beef striploin, offering the best balance of tenderness and juicy flavor. The center will have a warm pink hue with a nice sear on the exterior.

Medium (60-63°C): The meat becomes slightly firmer with a hint of pink in the center. This is a good option for those who prefer their steak cooked through a bit more but still want some tenderness.
