Scamorza is a cheese with a very short maturation, the spun curd is white in color, it becomes brown with smoking. All our smoked products are produced with the traditional system of natural hot smoking, which allows us to obtain the typical color and pleasant taste of smoke. Natural hot smoking is carried out in smokehouses, subjecting the product to short periods of exposure to wood smoke produced in special burners with certified wood chip mixtures.
