With its attractive green mottling, Sage Derby often appears on cheeseboards. It can also be stirred through sauces and pasta dishes to give extra flavour and colour.

Sage Derby is a hard cheese made from pasteurized cow's milk. Before aging, it is rolled in chopped sage, which gives it its green coloration and mild sage flavour.
