It is made from the shoulder and belly of a pig that has been raised in the Veneto region of Italy. The salami is cured for at least 4 months, during which time it develops its characteristic flavor and aroma.

It can be enjoyed on its own, or it can be used in charcuterie boards, salads, sandwiches, and pasta dishes. It can also be cooked, such as in a risotto or a pizza.

Store in the refrigerator. It will keep for up to 2 weeks. Wrap it tightly in plastic wrap or parchment paper to prevent drying and odors from affecting the flavor.
