Cow's milk. 50% fat. Semi-hard.
Pasteurised yellow cheese with a firm bite, earthy aroma, and slightly savoury flavour. Aged for 2 to 3 months, you can taste the rich sweetness of the milk and nutty undertones, often with an explosion of flavour in the mouth and a lingering cheese and onion tang.
Enjoy in sandwiches, as quick snacks, or as huge wedges on cheese platters. Garnish it with apples, walnuts, and crusty bread. It is also great in sauces, melted over baked potatoes, or grated over vegetable dishes and grilled. Best served with a Merlot or Pinot Noir.
