This cheese is made with 100% sheep’s milk La Leyenda is a small Spanish cheese produced in La Mancha. The cheese is made from raw sheep's milk and it's aged for a full year before consumption.
This is made the same way that a young Manchego would be except with dark veins of black truffle criss-cross the interior of this pretty cheese, infusing yet not overpowering the classic nutty, buttery flavors of a fine sheep's-milk cheese with the warm earthiness of truffle.
The texture of the cheese is firm and slightly crumbly, while the flavours are buttery and nutty with hints of raisins.
